Snow Day: Barefoot Contessa Recipes and Sundry Activities

Snow day

The great winter storm is…well, if this is it I guess it’s here. Kind of a wimpy thing up in Brooklyn, not that I’m complaining.

Our plan to fight the stuck at home blahs was not entirely necessary, but swung into action when we saw the snow.

We started with swimming.  Yep, that’s right, the kids went swimming.

I tell ya, the iPhone is really great for all the down time at gym & swim.  Meanwhile, back at the pool:

Then, food. Lunch was a variation on a Barefoot Contessa recipe for Roast Butternut Squash soup.  Very simple:

  1. Do yourself a favor and buy the squash pre-cut into chunks (does anyone like to peel butternut squash?), 3-4 lbs for 4-6 people.
  2. Cut up a couple of apples and a couple of onions. Toss all the veggies with olive oil, salt & pepper
  3. place on a sheet pan and roast at 425 degrees for 45 minutes or until tender. I find that the onions and apples cook faster than the squash, so usually cook them separately.
  4. When the veggies are done, put them aside to cool a little and then purée to the texture of your choice either with a food processor or blender (immersion or otherwise).
  5. Combine veggies with about 5-6 cups of chicken broth, heat, correct the seasonings and serve.
  6. Even better with a little grated Parm or croutons.

There was supposed to be a Valentine’s Dance-a-thon at the school today to raise money for the music program. Alas, because of the “storm,” it was postponed until March.  So instead of watching Jasper shake his booty, we…

That got us to 4 pm.  We finally succumbed to tonight’s feature presentation, the very earnest, environmentally correct, 1992 crowd-pleaser Fern Gully. On deck for the remainder of the day:

  • It’s pizza night for the kids, so we’ll be making dough from scratch and cooking it up the way the kids like it: cheese for Magnolia, no cheese (don’t ask) for Jasper.
  • Bath and bedtime for the kids, glass of wine for the moms
  • Barefoot Chicken Chili for adult dinner. Chicken in chili…we’ll see.
  • Movie night for moms: Whip it! on DVD

Reading through this post, I suppose it could have been called: The Incredibly True Story of Four People Stuck at Home on a Snow Day or perhaps more simply Happens Every Day.

    Once again we are living parallel lives. This weather’s making me kookoo. I’m currently plotting potential activities and outings for tomorrow before I really lose it and cut off the rest of my hair. I’ve made that chili before. Too many bell peppers for my taste. Burp anyone?
