Family Weekly Menu: May 2-8

A little late getting this one up, but don’t worry, you didn’t miss anything. Just some pizza from Toby’s last night (not quite as good as usual and, by the way, if someone offers you mascarpone on a pizza, just say no. I’ve tried it for you and it’s not good unless you like heavy cream on your pie). Best part of the evening was the company, and the homemade strawberry ice cream (more on that later).

Meanwhile, the black cloud that has been sitting over our house since January seems in no hurry to blow out of town. Who’s sick of it? Me.

Luckily, there are things to distract, like thumbing through my recipe binder. But first things first: I feel I must recap last week’s menu. Reader, it was great. Seriously, we found some keepers.

First: the baked salmon with leeks & dill: delicious, different, and simple enough for everyday. Try it.

We did in fact make the Smitten Kitchen recipe for pasta with asparagus, goat cheese & lemon, and it was also a great, quick weeknight recipe (and seasonal! Woo-hoo).

I loved the lamb kebabs. We NEVER have lamb, mostly because we are intimidated by it (despite the fact that Ina Garten, in every book, says that lamb is an easy dish for entertaining and we almost never ignore the B.C.). The yogurt marinade gave the lamb a great tangy taste that was perfectly complimented by the tzatziki. A bit more work for a weeknight, but a great weekend meal (and yes, perfect for casual entertaining). YUM! The kids liked it, too.

And the cauliflower soup was also a hit, definitely worth doing again, but maybe on a Friday night so we could enjoy it for lunch or dinner through the weekend. In fact, looking back, it was a very S.K. food week, and a successful one at that!

Sunday: As mentioned, Toby’s pizza with caesar salad (the dressing from  last week)

Asian Noodle Salad with Shrimp

Monday: Asian Noodle Salad with Shrimp (Bon Appétit, May 2009). This is a COLD salad. Did I mention it’s HOT here? I’m dying. And it’s raining raining raining so it’s especially hot in the house. I think this will be just the thing.

Tuesday: Reprise from The City Cook: Salmon with leeks and dill. Still have a leek from last week (and the dill). More rain predicated so no grilling. Maybe I’ll plug in the A.C. Sigh. At least we have good food to look forward to. I think we’ll also reprise the white bean puree and add a side of sautéed green beans.

Wednesday: Cinco de Mayo!  Spice-Rubbed Chicken & Vegetable Tacos with Cilantro Slaw. A June 2006 Bon Appétit find.

Thursday: Mom’s Marinade Flank Steak with Sautéed Spinach. Maybe some pilaf.

Friday: Since we’ll have steak left over, and it’s supposed to rain again: Carne Asada Burritos

Saturday: Pizza, pizza!

Oh yes, the homemade strawberry ice cream. Boy I really don’t need it except I absolutely do. It’s a no-bake recipe (here) I pulled from Gourmet (R.I.P.) last year, and it’s a winner. Tastes just like summer.

One more thing: it’s too darn hot here. Seriously, I can’t think. So if I’m repeating myself, just bear with me.

    We do these lamb chops regularly: Marinate overnight in EVOO, garlic, rosemary, salt and pepper. Grill. Done. Yum.
