Mother’s Day: An Easy Breakfast Strata + Weekend Links

Whatever your plan for Mother’s Day, I sincerely hope it won’t involve Cooking. Anything. If you’ve managed to score a rezzie at a spot where you know the food will be delicious, you won’t be rushed along, and it won’t be a total freaking zoo, awesome. By all means, enjoy.

Alternatively, you could have your hubby, partner, or doting family members make this completely yummy breakfast strata the night before and nosh on it leisurely, with coffee and fresh fruit, on Sunday morning in the comfort of your own home.

Breakfast Strata (aka Never-Fail Souffle from Saveur)

Serves 8

12 eggs
2 cups half-and-half
Pinch red pepper flakes
3 cups grated extra-sharp cheddar
1 loaf white bread, crusts removed and bread cut into 1″ cubes
Salt and pepper
6 tbsp. butter, melted

1. Beat eggs, half-and-half, and red pepper flakes together in a large bowl until well mixed, and set aside. Sprinkle 1 cup of the cheese on the bottom of a 9″ x 12″ baking dish. Cover cheese with two-thirds of the bread and season to taste with salt and pepper. Repeat layering (seasoning second layer with salt and pepper) with the remaining cheese and bread, ending with a layer of cheese. Pour egg mixture evenly over cheese and bread, then drizzle with melted butter. Cover and refrigerate overnight.

2. Allow souffle to come to room temperature. Preheat oven to 350 degrees. Bake souffle until puffed and golden, about 45 minutes.

Two notes:
You can vary the ingredients by using a mixture of cheeses, or adding, say, leeks, sausage, or a nice combination such as asparagus and gruyere.

The dish might be full enough to spill over while cooking, so you may want to put some foil or a baking sheet on the rack below.
