Family Weekly Menu: May 9-15

Did you have a nice Mother’s Day? We did.

First-time new moms!

We applied our birthday philosophy to the day (why have a birthDAY when you can have a celebratory birthWEEK?) and turned Mom’s Day into a full weekend event. Starting with Friday night, when we polished off the pitcher of margaritas that had been giving us peace of mind since Cinco de Mayo. Mmm, mmm, good! Seriously, those things got better as the days passed….

Saturday, we treated our mommy selves to a “couples massage” at a great local spa.  This was our first couples massage. I can’t say it was any different from any other massage except we could talk once it was over immediately instead of when we got to the lounge. It rocked!

Plus Nola = Now We Are Four.

We also indulged in some retail therapy. Anyone who knows us knows just how relaxing we find shopping. No, there was no Anthropologie near by. So we made do with some great local stores: Shoe Mine (where I had a big credit and bought some great red leather wedges), M.A.E., a gorgeous consignment shop (still thinking over the over-sized tan leather bag. Three compartments = great. But is it TOO big?) I’d been dying to look into. And Homebody Boutique, which Melisa wrote about last week. We’ve been loving our napkin rings (thanks Kim K. for another great idea).

Capped off Saturday with a great movie with the kids: My Neighbor Totoro. Four thumbs up!

Sunday started with Jasper wishing us both a happy Mother’s Day, so cute!! Blueberry pancakes and eggs. Some gardening (how do the weeds come up so quickly?) and tossing a ball around in the yard. And finally, brunch with Sarah & John at Prune (yippee, twice in one month! A personal best).

Of course, the week looms and so does the menu. I’m obsessing over brown butter and pecans this week; I keep reading all these amazing sounding recipes. Like the Pecan Cornmeal Butter Cake over at Smitten Kitchen. Or the Mexican Spiced Shortbread Cookies from Cooking Light. And the Pecan Brown Butter Cookies from the October 2009 Gourmet (we’ll never forget you). I don’t think I’m going to have time to do ANY of these this week. But you never know.

Sure she looks sweet but we need more reinforcements!

The weekly eats:

Sunday: We didn’t get to the Salmon with Leeks and Dill last week for various and sundry reasons, but we are getting to it tonight. The kids are having burgers, and I’m not apologizing for it.

Monday: We also didn’t get to the flank steak last week, so it’s on for Monday.

Tuesday: Will either be Fire-Roasted Red Pepper & Jalapeno Burritos with fresh guacamole OR a rotisserie chicken. Going to be a kind of long day, so we’ll play it by ear.

Wednesday: Whole Wheat Spaghetti with Sausage & Tomato Sauce from the April 2010 Cooking Light. Seems like a potential crowd-pleaser, and we don’t do pasta with red sauce too often.

Thursday: Roast Chicken Breasts with Spring Vegetable Quinoa. I’ve been meaning to try quinoa, and this recipe from the May 2010 Bon Appétit looks good. May be too much work, but we’ll try.

Friday: Steamed Cod with Ginger and Scallions (from Everyday Food: Fresh Flavor Fast) over Sautéed Bok Choy. Light, flavorful, perfect.

Saturday: Flatbread Pizza with Asparagus and Pancetta from Cooking Light. I wanted to make this last Saturday, but didn’t quite get my act together. Looks like a lighter style pizza right down our alley.

    Quinoa is really good and easy. Just rinse it first and then cook it like rice. I eat it for breakfast often with a little maple syrup and some almonds.
