The Menu: May 30-June 5

Well, we’re into day two of the three day weekend, and as far as cooking is concerned, it’s been a rhubarb spectacular. A friend brought me about 4 ½ lbs of rhubarb from his yard. So yesterday, with Magnolia’s help, I made rhubarb compote (rhubarb cooked with a ton of brown sugar into a kind of jam-type thing) and (even better) Strawberry Rhubarb Crumble (both recipes from, you guessed it, Smit Kit). I thought the pie was divine with some good vanilla ice cream on top. And the compote is going into my yogurt tomorrow morning.

On the menu this week:

Sunday: Saté Chicken Salad (ended up with rib-eyes on Friday instead of this, and quite frankly, it’s 87 degrees out so a no-cook meal tonight seems just the thing). This recipe is inspired by a “Gourmet Everyday Ten-Minute Main” recipe from May 2009

Monday:  Pasta with Tomatoes, Fresh Corn, and Pesto (might throw in some crispy bacon)

Tuesday: From the just-arrived June 2010 Bon App, a new salmon recipe: Salmon with Coriander Rub & Lime Cream. On the grill and probably with some sautéed green beans (and btw, I’m using pre-ground spices rather than grinding my own).

Burrito Wednesday; this week, vegetarian style with goat cheese instead of pepper jack.

Thursday: Pork Chops on the Grill with Garlic & Lime. Last week we meant to try this but forgot to pick up the pork chops, alas. *** Update: somehow we forgot to buy the pork chops AGAIN!! Stay tuned.

Friday: Spice Rubbed Chicken and Grilled Vegetables

Saturday: Pizza night. Speaking of: I finally did try the shaved asparagus & pancetta pizza. It was good but could have used some more cheese. And a week after I tried it, guess who came out with her own version? Yep, Deb at Smitten Kitchen. And her recipe was heavier on the fromage, so I might just have to experiment again, yum.

Next Saturday is our first CSA pick up! Just vegetables (the fruit pick up starts in July). Can’t wait to see what we get.
