I have had a devil of a time getting my menu together by Sunday the last couple of weeks! Just too much going on these days.
Sunday: Our second wedding anniversary (but 15th year), so we ate out at the fabulous Good Fork in Red Hook. Wow, Brooklynites: do yourself a favor and get over there pronto for some cocktails and delicious nosh. Don’t leave without having the pork and chive dumplings and the lemony, gin and prosecco cocktail. Special shout-out to Aunt Katie for staying with her happy niece & nephew!
Monday: Japanese Eggplant Stir-fry, inspired by the photo and recipe for Jap Chae via Sweet Savory Life (I’m so in the mood for noodles! and stir-fry!) as well as the recipe here for Japanese Eggplants and Haricots Verts from Epicurious.
Tuesday: Taking a break from our love affair with skirt steak to go back to our steady: flank steak. This time, Thai-style with Thai Red Curry Flank Steak via Food For My Family. Served with grilled veggies and jasmine rice.
Wednesday: Grilled Shredded Chicken Tacos with Spicy Slaw
Thursday: Pasta with Corn, Tomatoes, Basil and Bacon. This is a regular summer recipe for us, but we’ll be trying it this week with roasted tomatoes and corn, a fall-style take inspired by OneHungryMama’s recipe here for Babble.com‘s The Family Kitchen.
Friday: Spaghetti Bolognese (a request from Jasper) and Baked Eggplant with Roasted Tomato Puree and Parmesan
Saturday: Truth: we have had conflicts with Pizza Night the last few weeks so we’ll try and get it together for this week.
