Guess what I found in the backyard? Snowdrops!
Right behind these brave little darlings are the tulips, daffodils, hyacinth. The shoots are there, bravely pushing up through the ground. And one slightly misguided peony has decided it might be a good idea to start showing itself. Careful, there, tiger!
As we say around here: oh, joy, oh, rapture! Spring is officially going to get here.
It’s going to be 57 today, and in the high forties all week. Hooray!
Sunday: An old favorite spring recipe, simple and delicious: Fettuccine with Prosciutto, Peas and Lemon Chive Sauce served with salad.
Monday: It’s a one parent show: Melisa is on her own while I’m at sales conference. So dinner is all about easy: Burgers, Vegetables (and possibly fries)
Tuesday: Spinach and Mushroom Burritos (this is our standard, but check out the Pioneer Woman for some Beef & Bean Burritos action, sure to please cowboys and girls everywhere)
Wednesday: Rotisserie Chicken, Green Beans & Rice. Isn’t rotisserie chicken a midweek lifesaver? We get ours par-baked from Fresh Direct.
Thursday: Shrimp Stir-Fry- something like the Summer Stir-Fry on PW. We’ll make it up as we go along.
Friday: Chicken Chili with Corn and Black Beans via Dinner A Love Story
Saturday: Time to revive the Asparagus & Pancetta Flatbread Pizza
